Think You Can't Get Your Kids to Eat Veggies? Think Again!

Do you have trouble getting your kids to eat their veggies?  I have one that gobbles them up, but the other one is a completely different story.  TwitterMoms and Hidden Valley Ranch have teamed up to have a fun recipe blogging contest and I decided to join in.  The rule are pretty simple--start with the basic Hidden Valley Ranch Mock Mash Potatoes Recipe and add your own creativity.  I couldn't wait to get started, especially since I had all the ingredients on hand as well as a willing assistant!

You can read the basic recipe here, or as follows:

1 head cauliflower, washed and broken into florets (about 4 cups florets)

⅓ cup Hidden Valley® The Original Ranch® Dressing Light
1 tablespoon fat-free milk
1 tablespoon light margarine (tub-style) or butter
¼ teaspoon salt

Place cauliflower florets into a steamer and cook for about 20 minutes or until tender.

Transfer the cauliflower to a food processor.

Add Hidden Valley® The Original Ranch® Dressing Light, milk and margarine to the cauliflower and blend until the mixture reaches the consistency of mashed potatoes.

Add salt, mix and serve.

Now, for my recipe

Mock Mash Potatoes Italiano!

1 head cauliflower, washed and broken into florets (about 4 cups florets)
1 clove of garlic, minced

⅓ cup Hidden Valley® The Original Ranch® Dressing Light
1 tablespoon fat-free milk
1 tablespoon light margarine (tub-style) or butter
¼ teaspoon salt
1/4 C. grated Parmesan cheese
1 snip of fresh parsley (optional)
Place cauliflower florets into a steamer and cook for about 20 minutes or until tender or microwave in a microwave steamer bag till tender.

Transfer the cauliflower to a food processor.  Add garlic. 

Add Hidden Valley® The Original Ranch® Dressing Light, milk and margarine to the cauliflower and blend until the mixture reaches the consistency of mashed potatoes.  Add salt and Parmesan cheese, mixing well.  Garnish with parsley.

I am surprised the cheese made it to the bowl without stopping in her mouth first!

Looks good, but how does it taste?

Now for the true test--the taste test!   Veggie eater was licking the beaters like it was candy.  Non-veggie eater gave it the thumbs up!  Yeah!  The big guy?  Well, he really thought it was a potato dish till I told him.  He suggested more parsley, but enjoyed it.
