Nearly Guilt-Free Incredible Banana Chip Muffins


I discovered a delicious banana chip recipe that was pretty unhealthy. I made a few modifications and they still taste just as good. without all the guilt.

1 egg
1/3 C. applesauce (no sugar added)
1 TSP. vegetable oil
¾ C. sugar (I cut to about ½ cup)
3 medium ripe bananas, mashed
¾  C. all purpose flour
1 ¼ C. whole wheat flour
½ cup old-fashioned oats
1 tsp baking powder
1 tsp. baking soda
½ tsp. salt
½ - ¾ C. mini semi-sweet chocolate chips

In a mixing bowl, beat egg, applesauce, oil and sugar until smooth.  Stir in bananas.  In a small bowl, combine dry ingredients, stir into the banana mixture just until moistened.  Stir in chocolate chips.  Fill greased (or lined) muffin cups three-fourths full.  Bake at 375 for 18-20 minutes or until done.  Yield: 1 dozen.

This is a recipe that I have modified many times.  If you want to get even healthier, use all whole wheat flour (texture will be rougher) and only use about ½ cup chocolate chips.  I like to make mini-muffins with this.  They are so yummy to just pop into your mouth for a snack or dessert.  My girls even ask for these for dessert!
