Don't Put Those Chicken Bones in the Garbage!!! Save Money Instead!!

My husband was cleaning up the roasted chicken we had for dinner.  I caught him just before he threw the chicken carcass out.  A chicken carcass is perfect for making chicken stock or chicken noodle soup, instead of buying it.  It is also much tastier and healthier than canned stock or soup and both can be put in the freezer for later.

Simply take the carcass, cover it with water in a large pot.  Add a couple chopped carrots and stalk of celery.  Bring to a boil, then simmer for an hour or so.  If you'd like, add a touch of salt (I prefer Kosher or Sea Salt).  If you are just using it for stock, remove the bones, and strain the veggies out (and eat as a side dish later).  I like put the stock the Ziploc twist container that hold 2 cups/16 oz.  I then put it in the freezer for future recipes.

If you want to make soup, fish out the carcass, return the broth to a boil and add egg noodles and cook as directed. 

Simple, easy and cheap!  The bones tonight probably made about at least 6 large cans of soup that is so much tastier and only cost pennies a "can!"

Thanks for posting this. I've always wanted to try making stock but thought the process took a lot longer and was more detailed. Going to try it soon.
