My Mom's Tomato Salad Recipe

My dad sure has a green thumb, even at nearly 88 years old!  I counted 14 tomato plants in his garden when I visited last month.  I don't think he will ever stop gardening.  My brother-in-law even wants his soil willed to him.  I'd like that, too, especially since we have to battle with clay soil here.  But anyway, Mom always makes the best tomato salad from Dad's ripe garden tomatoes.

It is a very simple recipe and I can't really give you exact measurements, but this is what you do.  Chop up as many tomatoes as you'd like.  Add onion and fresh chopped basil.  Sprinkle with salt to taste and drizzle with olive oil.  Let set a few hours in the fridge before serving.

After you eat the salad, you will be left with a bit of dressing in the bottom.  Either just add more tomatoes, onions and basil, or sop it up with soft, white Italian bread.  It is delicious!

That is so neat about your day being 88 and still gardening! I really like this tomato salad recipe! Really great to make in the hot weather!
