Authentic Italian Meatball #Recipe from the Old Country
People think I am joking when I say my husband married me for the family Italian meatball recipe, but I am fairly certain that is a huge part of it. When we were dating, he came over to my parents for dinner one night when we were having meatballs. I kid you not, I think he had 17. He says we exaggerate that number and it grows every year, but I don't think so. Look at his plate from just the other day. I counted 13 and know he had already sneaked some before he sat down to eat.
This is such a great recipe that I thought I would share it with you.
Authentic Italian Meatballs
1 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
4-5 slices day old bread soaked in water
and squeezed or 3 slices soft bread crumbled
1/4 cup grated Parmesan cheese
2 TBLS. Minced parsley or 2 ½ dried
1 1/2 tsp salt
1/4 tsp pepper
2 small cloves garlic finely minced or 1/2 tsp garlic salt
Mix all ingredients and shape into 1 1/2” balls. Brown in oven at about 400 for 10 minutes or in skillet in hot oil, turning to brown on all sides. (Do not need to turn in oven) Drain off fat and cook in sauce for 30 - 40 minutes. Makes about 50.
